Elevages Perigord Cassoulet is actually a rich, savory slow cooked bean stew (casserole!) with succulent French meats like pork, mutton (lamb), goose, duck, sausage. Each region has its own garnish and way of preparing it, but white haricot beans, fat, garlic, herbs and spices do make the dish.
